Potatoes – any kind!
Seasonings of Choice – I love smoked paprika, black pepper, sesame seeds, Nutritional Yeast and bread crumbs.
Preheat your oven to 400. Line a baking sheet with parchment paper or silicon mat.
Slice, Chop or Dice your Potatoes however you like. We often make long skinny ones, but today I am making more of a home fry shape by largely dicing my potatoes.
Put them in a microwave safe dish and rinse with water. Drain 98% of that water off , leaving just a few teaspoons in the bottom of the bowl. Microwave for 8 minutes. You can stop half way and stir them up if you have a large amount of potatoes (like I do in the photos below!)
While they are microwaving, mix up your spices. You can really get creative here. Things like Garlic & Rosemary, Tex Mex or Lemon Pepper are all fun mixes to try. Whatever spices you choose I suggest also adding Nutritional Yeast and Bread Crumbs. It gives the coating some texture that mimics deep frying.
Mix your seasoning through out the potatoes. Spread the potatoes out in a single layer on your baking sheet. Bake for 35-45 minutes. Turning the potatoes half way through.
Tada!! Oil free – low fat crunchy potatoes!
Alternatively, as shown below, I also use The Rock One-Pot Dutch Oven. These things are very non-stick, claiming 3 times better than traditional non-stick cookware; and I would confirm it is. You don’t need any parchment paper or silicon mats in these. I absolutely love this and use it almost daily. When I use this to make these fries, I keep the cover on for the first 20 minutes and it makes them extra moist but still crunchy!
