Banana Muffins


2.5 Cups Whole Grain Flour ( I use Wheat)

2 TSP Cinnamon

1/2 TSP Nutmeg

2 TSP Baking Soda

1/2 TSP Salt

1 TSP Baking Powder

2/3 Cup Hemp Seeds

2 TBSP Flaxmeal (ground flax seeds)


1 1/4 Cup Apple Sauce

1/2 Cup Maple Syrup

1 Cup Plant Milk (Almond, Cashew, Soy…whatever you like)

1 TSP Vanilla

1/2 Cup Diced Bananas

Optional Topping: 1/4 Cup Quick Oats + 1/4 Cup Date Sugar



Preheat Oven to 350 F. Line 12-16 muffin tins with parchment paper liners. Combine all the dry ingredients (except Optional Topping). In a separate bowl combine all the wet ingredients. Mix together. Pour into muffin tin. Sprinkle topping if desired.  Bake 24 minutes. Let cool on cooling rack for 20+ minutes before storing.
