3/4 Cup Diced Red Onion
1 Cup Cooked Brown Rice
1 1/2 Cup Cooked Chickpeas
1 TBSP each of Smoked Paprika, Garlic Powder, Black Pepper, Cumin and Chili Powder
1 TBSP Hot Sauce (Optional)
4 Whole Wheat Tortilla Wraps
1 Cup of Diced Tomatoes
Parsley for Garnish
Preheat oven to 400c
Mash Chickpeas. Add in Onions, Hot Sauce, Rice & Spices.
Portion out 1/4 of mix into each wrap and roll up. Place in a 9×13 oven dish. Top with Tomatoes and Parsley. Bake 15-18 Minutes, until crispy.
Serve with Salsa, Guacamole or Cashew Cream for dipping.
