Apple Muffins



1 cup Whole Wheat Flour

1 cup All Purpose Flour

2.5 cups Quick or Rolled Oats

1/2 TSP Salt

2 TBSP Baking Powder

1 1/2 cup Plant milk (I use Almond)

2 TBSP Flaxseed Meal

2 cups of Diced Apples (about 3 apples)

1 3/4 Cups of Pitted Dates

1 TBSP Baking Soda

2 TBSP Ground Cloves

3 Cups Water + 5 TBSP Water



Preheat oven to 400c. Line muffin tins with 24 parchment paper liners. Bring the 3 cups water to a boil. Add in the Pitted Dates and simmer for 8 minutes.

Meanwhile mix the Flaxseed Meal with 5 TBSP water and let stand 5+ minutes.

In a large mixing bowl combine the dry ingredients. (Flour, Oats, Salt, Baking Powder, Baking Soda & Ground Cloves)

In a high powered blender add the Plant Milk, Flax Mixture & Date Mixture (including water). Blend until smooth. Add to the dry ingredients and blend until all ingredients are wet. Do not over mix. Add in diced apples and mix throughout.

Spoon into 24 parchment paper lined muffin tins. Bake 22-25 minutes. Remove from oven and allow muffins to cool on a cooling rack.
