1 Cup of Sweet potato, cooked with their skin has all your Vitamin A for the day (or two!), contributes to your daily Calcium, Iron, Vitamin B6, Potassium, Manganese needs and more.
5 Long Skinny Sweet Potatoes
1 TBSP Tahini
1 TBSP Blackstrap Molasses
1 TSP Apple Cider Vinegar
1 TSP Veggie Broth or Water
1 TBSP of “Chinese 5 Spice” or a mix of fennel, anise, ginger, cinnamon & cloves
Preheat oven to 400. Line a baking sheet with parchment paper.
Cut your sweet potatoes into 1/4″ slices. Trim the skin off of the slices, retaining an “O” shape curl of skin. Lay out the slices of sweet potato on your baking sheet. Bake for 15 minutes while you prepare the sauce and “O” curls.
Mix up the sauce in a bowl. Evenly coat the “O'” curls with the sauce. Remove the potato slices from the oven and top with the sauce covered “O” curls. Drizzle any additional sauce over the potatoes. Sprinkle with spice mix.
Bake for an additional 30 minutes
