Peanut Butter & Jam Power Bars

1/2 cup  Steel Cut Oats 100% Whole Grain

1/2 Cup Berries Chopped

8 Prunes or Dates Chopped

2 1/2 Cups Water


1/4 cup Quick Oats

2 TBSP Flaxmeal (ground Flax Seeds)

1 TBSP Chopped Raisins

1 TSP Baking Powder

3/4 Cup Whole Wheat Flour

1 TBSP Peanuts Finely Chopped

1 TSP each Hemp Hearts, Chia Seeds and Raw Sunflower Seeds

2 TBSP Apple Sauce

1/2 Cup Peanut Butter


Bring water to a boil. Add Steel Cut Oats, Berries and Prunes/Dates. Reduce to low/simmer. Set timer for 20 minutes and stir occasionally while you prep the rest of the ingredients.

Preheat Oven to 350F / 180C

Add all dry ingredients to a bowl. Mix well. Add Peanut Butter and Apple Sauce. Once Steel Cut Oats/Prunes/Berries are cooked add to mixture.

Fill Silicon Baking Bar Mold with batter. If you don’t have a mold, cover a baking sheet with parchment paper and form 12 bars by hand. Bake 30 minutes. When you remove them from the oven flip the mold upside down to allow the bars to slide out so they do not sweat inside the mold. Remove mold and allow the bars to cool completely before eating or storing.

These keep in the fridge for one week and in the freezer for 1 month. My 17 month old loves them.
