In a stove top pot add:
1 1/2 cups Potatoes diced with skins on
1 cup Carrots diced
1/4 Cup Raw Cashews
1/2 Yellow or White Onion diced
1.5 cups Water or Veggie Broth
Bring to a boil, then cover and reduce heat for 22 minutes.
Remove from heat and retain 1 3/4 cups of the liquid left. Pour out any excess.
Pour in to a high powered blender and add:
1 tsp Turmeric
1/2 cup Nutritional Yeast
4 TBSP Plant Milk
Blend in a high power blender until smooth. About 90 seconds.
Pour over your favorite Pasta. We usually eat with Whole Wheat Pasta. This is one of my 15 month olds favorite meals. We have also used this on Rice, Beans, Veggies and Potatoes.
I double or even triple this recipe and have lots of left overs!
Also can be made in my fav Instapot! I throw all ingredient in my Instapot pot, set for 20 minute steam (with the vale closed) then release and pour into blender to finish!
